Chicken Enchilada Soup

I have discovered a new love - Chicken Enchilada Soup from Chili's. My bestest friend, Erika turned me on to it late last week and now I am hooked. That was even my Easter meal. It tastes just like a chicken enchilada. It has chunks of chicken in it so I had to attack it with the boat motor (immersion blender) and shred the chicken.
